Brussels sprouts and beets are in style and in season! You’ll find these fall favorites at the Monona Farmers’ Market along with fresh apple cider, apples, broccoli, eggplant, winter squash, and a variety of potatoes and root vegetables. Roasting vegetables is an easy and tasty way to prepare delicious vegetables.

Oven Roasted Brussels Sprouts
- 1 pound Brussels sprouts, trimmed and halved lengthwise
- 2 tablespoons extra-virgin olive oil
- ½ teaspoon sea salt
- ¼ teaspoon fresh ground black pepper
Preheat oven to 400 degrees. Toss Brussels sprouts with oil, salt and pepper. Place on a baking sheet and roast, stirring every 7 to 8 minutes, until crisp and golden brown on the outside and tender inside, about 30 to 25 minutes. Place in a bowl and serve. Garnish with grated parmesan cheese and crumbled bacon.
